Nitrogen in food packaging
Modified-atmosphere packaging changes the gas mixture around food. Nitrogen may be used alongside gases such as carbon dioxide to create conditions suited to a product.

What the gas does
Nitrogen is relatively unreactive and can displace oxygen in package headspace. It can also help support flexible packs. The mixture depends on the food, packaging material, storage, and shelf-life goals.
Packaging is a system
Gas composition alone does not make food safe. Hygiene, seals, cold-chain conditions, validated shelf-life controls, and product formulation matter. Modified atmosphere packaging must be designed for the specific product and market.
